If I had to choose one of these scenes to remain deleted it would be the ending twist that the factory where the T800 is finally defeated turned out to be Cyberdine Systems. I get the idea and while I don't deny it's quite clever but it does seem a bit too convenient.
OMG literally everything in Terminator 1 and 2 all makes sense now because of these scenes here❤ I LOVE ARNOLD. Notice how he just walked back to the car and didn't care about no one else that saw him. In t2 the t800 wasn't lying when he said they are set to read😅
That was pretty cool, like discovering there was a Terminator 1.5 made soon after the first one, and never having seen it before.

Some of these scenes are worthy of being in the final cut. There's so many parallels with the sequel it gives them both more depth. Fantastic!

The first and last scenes were good cuts and not just because they ruin the pacing. The first scene, aside from being a knockoff of Rambo as many have pointed out, confuses the plot as Matrix never shot any cops and if Kirby talked to the police then why didn't the cops who arrest Matrix know who he was when they arrested him at the gun shop? In the last scene, why wouldn't the reinforcements know what Matrix looks like? There should be photos of him available and he was unarmed so why shout "freeze" at him?
if i could, i would tie Zack Snyder up and force him to watch these scenes and T2 deleted scenes, the real director's cuts

Editors have jobs for a reason. It's mostly about maintaining continuity in a story, as to why editors subtract scenes or parts of scenes. If directors were allowed to include every scene they filmed, it would ruin most movies.

Kyle's breakdown should have been left in. Not only does it add more character development, but it also presents an interesting question. How would time travel affect someone psychologically? Think about it, you know what's coming and you are tempted to play god with fate not knowing the true outcome. I think that would make one go mad. Also take into account that Kyle knows only conflict. That would jack up shell shock to the Nth degree. But that is just me.
Editors consider time constraints, as well as story continuity, when they make their decisions about what to cut or minimize.

I don't know how any of the actor's felt but I think I might have been at least a little angry that an entire seasons work was a dream. It would seem like a waste of time.

No. They survive on editing tables. Editors have a job for a reason. For example, in the original 'Alien', one of the opening scenes had Kane in the galley preparing breakfast while the rest of the crew was still awakening from cryosleep. The scene was deemed not necessary for the story, or its continuity, and was sensibly cut from the final film.
